Cold Plasma for Clean, Safe Street Markets
Every day, millions of Indians buy fruits and vegetables from street carts and small shops. But what most people don't see is how much of this food is lost, how dirty it can become and how many chemicals may be on its surface by the time it reaches the customer. India loses 6–15 % of fruits and 5–12 % of vegetables between farm and fork. In money terms, that's over ₹57,000 crore lost every year just on fruits and vegetables. A big part of this loss happens at the last mile — in open carts and shops, where produce is exposed to dust, germs, heat. and pesticide residues from farm. We believe there is a better way — using Cold Plasma Technology to make street-sold produce cleaner, safer and longer-lasting, without harming the environment or making food expensive. The Problem: Open Carts, Dust, Germs and Chemicals 1. Huge losses after harvest National studies show that: • Fruits: 6–15% are lost before they reach your plate. • Vegetables: 5–12% are lost in the same journey. • Crops like guava and tomato, onion are among the worst hit, with losses above 11–15%. Much of this loss happens: • During transport in open vehicles • While stored in open carts and trays under the sun • When vendors sprinkle untreated water to "freshen" produce, which often increases germ growth 2. Dust and microbes Most street carts and small shops display produce in the open: • Exposed to road dust and pollution • Touched by many hands (vendor and multiple customers) • Sitting near drains, garbage or animal movement in some markets This makes fruits and vegetables dirty and unsafe, especially: • Cut vegetables • Leafy vegetables • Soft-skinned produce like tomatoes, berries and grapes 3. Pesticide residues To protect crops, farmers use pesticides — but many fruits and vegetables still carry chemical residues when they reach the market. Consumers usually: • Wash at home with normal water (which removes only upper part of fruits & vegetables) • Or don't wash at all, especially for ready-to-eat cut fruits Cold Plasma research shows it can break down many pesticide molecules on the surface of food, without damaging the fruit or vegetable & deactivate fungal, bacterial pathogens. Our Idea: A Dual-Function Cold Plasma System for Vendors We propose a simple, portable system for street and cart vendors, especially high-footfall ones. It has two main parts: 1. Point-of-Sale "Clean Handover" Unit A small device installed at the front of the cart or shop counter: Plasma Air Tunnel / Curtain As the vendor picks an item (e.g., tomato, apple, bunch of coriander), they pass it quickly through a narrow tunnel. Inside, a cold plasma module creates a cloud of safe, short-lived reactive species from air. In a few seconds, this: • Reduces germs on the surface • Starts breaking down pesticide residues Plasma Activated Water (PAW) Dip or Spray The same system continuously treats water to make PAW — water enriched with natural reactive species (mild forms of oxygen and nitrogen compounds). After the air treatment, the produce is briefly dipped or sprayed with PAW, then drained. (High ORP, Less nitrate, nitrite) This further: • Kills or inactivates microbes • Removes more pesticide residues • Leaves no harmful chemical behind To the customer, it looks like: Pick → Pass through plasma air → Quick PAW dip/spray → Handover in clean condition. 2. Closed, Cool, Clean Storage Chamber The main storage space on the cart or in the shop is redesigned as a closed box: • Maintains a lower temperature (around 10–18°C, depending on the item) using evaporative cooling (water + airflow) or a small, efficient cooling unit • Keeps humidity high so vegetables don't dry out or wilt • Periodically circulates plasma-treated air inside — reducing airborne germs and spores, breaking down ethylene gas (which speeds up ripening and spoilage), and cutting bad smells and slime on walls • Sometimes uses a fine PAW mist inside the chamber, forming a thin antimicrobial layer on produce while keeping humidity high without wet pools of water The result: a cool, humid, low-germ environment that keeps produce fresh for longer than open carts. How Cold Plasma Works (In Simple Words) Cold plasma is not a hot flame. It is a special state of air or gas created using electricity, at nearly room temperature. In simple terms: • Electricity is passed through air or water in a controlled way. • This creates reactive particles (very active forms of oxygen and nitrogen). • These particles damage the outer walls of bacteria, yeast and molds — so they die or stop growing. • They break pesticide molecules into smaller, less harmful pieces. • They destroy ethylene gas, which tells fruits to "ripen fast." Because it is cold, it does not cook or damage the food when used correctly. What This Means for You For Customers • Cleaner produce: less dust, fewer germs, lower pesticide residues • Safer to eat: especially important for cut fruits, salads and ready-to-eat items • Better quality: fresher-looking vegetables and fruits for more days For Vendors • Less wastage: extending shelf life by even 1–2 days can cut daily losses significantly • More income: buy in slightly larger quantities at better rates, sell more before spoilage and possibly charge a small premium for "plasma-cleaned, safer" produce • Better image: a clean, closed, tech-enabled cart attracts more customers, especially families and health-conscious buyers Social Impact: Safer Food, Better Livelihoods Health for millions Most urban Indians depend on street vendors and small shops for daily fruits and vegetables. Making this channel cleaner and safer reduces the risk of foodborne disease, lowers long-term exposure to pesticide residues and builds trust in local food systems. Dignity for vendors Street vending is a major source of income for low-income families, migrants and women and youth. A modern, clean, tech-enabled cart makes the job more respectable, attracts younger people to see vending as a serious business and can be part of branded, franchise-style models run by local entrepreneurs. Economic Impact: Saving Food, Saving Money India loses an estimated 7.36 million tonnes of fruits and 11.97 million tonnes of vegetables every year after harvest, worth over ₹57,000 crore. If even a small fraction of retail-level losses is prevented by plasma-equipped carts and shops, hundreds of thousands of tonnes of food can be saved — keeping thousands of crores with farmers, traders and vendors instead of turning it into waste. This also creates new business opportunities: • Manufacturing of plasma reactors, PAW units and insulated carts • Service providers for installation, maintenance and monitoring • Brands that operate networks of "plasma-safe" carts in cities Environmental Impact: Less Waste, Fewer Chemicals Less rotting food in landfills Every tonne of fruit or vegetable saved from spoilage means less organic waste in dump yards, less methane (a potent greenhouse gas) from rotting food and lower burden on already-overloaded municipal waste systems. Fewer harsh disinfectants Some vendors currently use chlorine, bleaching powder or unregulated disinfectants — often in an uncontrolled way. Cold plasma and PAW offer a chemical-free or low-chemical alternative, generated from air and water on the spot, with no long-lasting toxic residues — the reactive particles turn back into harmless oxygen, water and nitrates after treatment. Long-term: lower pesticide pressure If consumers start valuing and paying for low-residue, plasma-treated produce, this can encourage farmers to use fewer and safer pesticides, push supply chains to track and improve residue levels, and reduce overall chemical load in soil and water over time. A Vision for India's Food Future Imagine walking up to a street cart or small shop and seeing a closed, clean display instead of open trays in the sun — a small device that cleans each item before handing it to you — and vendors proudly saying: "Ye plasma se saaf kiya gaya hai — zyada din taaza, zyada surakshit" ("This has been cleaned with plasma — fresher and safer for more days"). This is not about high-tech for a few. It is about safer food for ordinary families, better income for small vendors, less waste for our cities, and a cleaner environment for everyone. Cold plasma is already being studied and used in labs and large food plants around the world. Our goal is to bring it to India's streets and neighbourhood markets, where most people actually buy their fruits and vegetables.
